So for Valentine's Day brunch I decided to make Ben a breakfast that I learned how to make when I took a cooking class at Sur La Table in like 7th grade with Brittany Bartosiewicz Ha. (Wow talk about a run-on sentence, sorry!) And let's face it when Valentine's Day is on a Sunday it practically ruins it... but then I had this great idea. So I made cream cheese stuffed crepes with a strawberry banana compote, homemade turkey sausage, and fruit salad. It was delicious. Want the recipes? Ok.
(This picture is actually from the leftovers today...Ben and I split the third crepe to make it even, that's why one is only half.)
Cream Cheese filled Crepes with Strawberry Banana topping
Ingredients:
For crepe batter:
2/3 c flour
½ tsp salt
3 eggs beaten
1 c milk
For cream cheese filling:
½ tsp salt
3 eggs beaten
1 c milk
For cream cheese filling:
2 (8 oz ) pkgs cream cheese
¼ c sugar
1 tsp vanilla
¼ c sugar
1 tsp vanilla
Combine flour salt and eggs, beat until smooth. Gradually add milk mixing until blended. Let rest for 15 mins. Cook with crepe pan. (We have an electric crepe maker that we use but if you have a crepe pan and know how to use it more power to ya, just don't ask me how)
In a separate bowl combine cream cheese sugar and vanilla til blended
Put ¼ c mixture in each crepe and fold into thirds
bake at 350 for 15-20
serve with topping
Banana Strawberry Topping
makes 2 cups
Ingredients:
1 10 oz strawberries thawed
1 T cornstarch
1 Banana sliced
Drain strawberries reserving 1 1/2 C liquid. Put mixture in saucepan and gradually add cornstarch stirring until well blended. Bring to boil over med. heat and boil for 1 min. Stir in fruit. (At this point you might want to add some sugar because our frozen strawberries were pretty sour, but its up to you. Make a judgment call.)
Sausage patties (These don't taste like typical sausage, I think they kinda taste like Thanksgiving stuffing, but that's just me)
Makes 12
Ingredients:
1 c fresh bread crumbs
½ c milk
2 c ground turkey
½ c chopped fresh parsley
2 t thyme
1 t salt
1 t dried sage
¼ black pepper
olive oil for frying
In med bowl combine bread crumbs and milk let stand 5 mins. ( I used the bread crumbs that come in a can and they are so finely crumbled that honestly it was way to much. So if you aren't going to use fresh bread crumbs I'd cut the measurement to 3/4 or 1/2 C). With fork stir in all other ingredients. Divide into patties. Cover and let chill at least one hour. Cook on both sides until brown over medium.

Apple
Banana
Mandarin oranges
Grapes

2T honey
½ t soy sauce
½ t poppy seeds
½ t ground ginger
¼ t mustard
salt
Cut up fruit of your choice into bite size pieces and toss in dressing. (This dressing is very gingery.. Ben and I LOVE it.)
Dressing
1/3 c vegetable oil
2 T lime juice
2T honey
½ t soy sauce
½ t poppy seeds
½ t ground ginger
¼ t mustard
salt
Cut up fruit of your choice into bite size pieces and toss in dressing. (This dressing is very gingery.. Ben and I LOVE it.)
Also... On Saturday night Ben and I made this Mexican Lasagna. Very delicious as well.
So there you go! I know you didn't ask for them, but here they are anyway! And by the way, the breakfast makes WAY more food than two people can eat. So refrigerate for leftovers or invite people over or share with your roommates.
